Just like how your Average Order Value tells you how much each new order is potentially worth, your Average Customer tells you what each new customer will potentially do over their customer lifetime. How much they might spend on each order, how many orders they'll place, how long between each order, etc.
The Average Customer's metrics are calculated for you automatically. As new customer behavior and orders come in, they'll be recalculated. This will let you always stay up-to-date with the natural evolution of your customer base.
